WINE TYPE AND VARIETY:
Aromatized wine, elaborated from sherry wines based on Palomino and Pedro Ximénez grapes.
AGING:
The base wine is a blend of Oloroso with an average age of some 15 years and Pedro Ximénez with 6 in which no fewer than 32 botanicals are macerated, it includes wormwood, cinnamon, cardamom, thyme, aniseed, rosemary and clove and once prepared the product is aged in French oak barrels, for about 14 months.
TASTING NOTES:
Deep amber and mahogany hue. Intense, rich and complex nose with present French and American oak aromas. Balsamic notes are mixed with chocolate, hazelnuts, roasted coffee and citrus notes such as orange zest, with a subtle spice of liquorice and clove. In the palate it is oily and rounded and in it, you can appreciate the velvety sweetness of the PX and the long-nice estructure of the Oloroso.
FOOD PAIRING:
Smoked fish and meat, grilled octopus and sardine, fried anchovies, clams and razor clams, grilled pepper, stuffed olives, dry fruit, aged cheeses and Iberian ham.
