There are several methods to obtain it, among which are the traditional or pressing (in disuse due to the work involved), and the mechanical. <\/p>\n\n<p>The latter is based on a <strong>centrifugation process<\/strong> that greatly shortens times. It is also recommended that they are in their sixth or eighth month, since it is the time when they have the most oil inside. <\/p>\n\n<h3 class=\"has-medium-font-size wp-block-heading\">2. <strong>Washing and preparation<\/strong>  <\/h3>\n\n<p>It is best to take <strong>a maximum of 24 hours<\/strong> between harvesting and grinding, because a longer time can lead to fermentation, which would oxidize the oil and cause it to lose quality. <\/p>\n\n<p>Before starting the process, it is essential that the olives <strong>are washed with dechlorinated and decalcified water<\/strong> , as well as the leaves, branches and even stones that have been strained so that the final product does not acidify. <\/p>\n\n<h2 class=\"has-medium-font-size wp-block-heading\">3. <strong>Crushing and whipping<\/strong> <\/h2>\n\n<p>Milling or crushing is the <strong>first step to obtain the oil,<\/strong> because in this process the cells of the olives are crushed and the first oil is obtained. <\/p>\n\n<p>There is a second step that is to beat the dough that is obtained, that is, the pulp, the water, the bone. <strong>This process makes the oil easier to obtain<\/strong> . It cannot be beaten in any way, it must be done with great care and at a very slow speed to prevent it from coming into contact with air and increasing its acidity. <\/p>\n\n<h3 class=\"wp-block-heading\" style=\"font-size:24px\">4. <strong>Centrifugation and filtering<\/strong>  <\/h3>\n\n<p>At a <strong>temperature below 35 degrees,<\/strong> the mass enters the centrifuge and the high speeds separate each of its elements, leaving the water and the pomace outside the machine and the oil in the middle. <\/p>\n\n<p>Once everything has been separated, it is <strong>filtered to remove the last impurities<\/strong> so that it can be stored. <\/p>\n\n<h3 class=\"has-medium-font-size wp-block-heading\">5. <strong>Olive oil<\/strong>  <\/h3>\n\n<p>From here, the product is almost identical to what we see in any supermarket.
